The Permanent Death Mode is what is advertised: “Play with only one life and no second chances”, although the developer has left some tips to overcome the adventure.
Speedrun Mode is interesting, they advertise it to “test your skills and see how fast you can complete the game” to race your own times.
“Beat the established time to get a new outfit and show off to your friends and other Prince of Persia fans,” they comment from Ubisoft.

Quality of Life – New game accessibility options:
New option to activate “Omnidirectional Parry” and allows you to parry an attack coming from behind, above or below you. New “Athra Auto Reload” option on custom difficulty. New option to “Hide the HUD”. New option to adjust the Background Audio level.
Add to this 'Fashion Week' by adding something with a touch of nostalgia, so there's a new outfit for Sargon unlocked immediately with the download of the patch.
Although there are a few more extra ones that do require a lot of extra effort to get, these are the following:
Swift Sargon (Silver): Unlocked by beating the game in Speedrun mode in less than 10 hours, on any difficulty. Holo Chroma (Sands of Time alternate color): Unlocked by beating the game in Permadeath Mode, on any difficulty. Gold: Unlocked by defeating the game in Permadeath Mode on “Immortal” difficulty.
The trailer that Ubisoft has prepared for the occasion clears up most of the doubts that may be had in this regard, although there may always be some additional ones.
But it is clear that Ubisoft updated Prince of Persia: The Lost Crown for free with “Warrior's Path”, adding permanent death and other new features to the metroidvania.
